Reporting to the Vice President, Field Operations and working collaboratively with restaurant leadership, General Managers and Restaurant Support Center partners. The Market Manager will be critical in cultivating Portillo’s familial and high performing culture while executing world-class operations who achieve continuous greatness with unrivalled guest experience.

This Market Manager position will be based out of Central Indiana or Southeastern Michigan.

The Market Manager is a strategic thinker with strong execution talents who embodies high energy and has an exceptional capacity for both understanding people and business knowledge. Has a passion for delivering superior results and guest experience in a best-in-class high volume restaurant environment. This position requires a strong people leader who possesses an equally valued skillset of rigorous operational acumen.

CORE RESPONSIBILITIES

· Deliver a superior guest experience by enabling restaurants with the opportunity to create lifelong memories by igniting the senses with unrivaled food and experiences.

· Collaborate and provide results-oriented leadership in developing and executing the market annual operating and growth plans that meet or exceed annual EBITDA and sales targets.

· Monitor and achieve critical measures of market P&L performance per restaurant, inclusive of labor standards, execution, speed of service, QSAC (Quality, Service, Attitude, and Cleanliness) and Team Member attraction, retention and turnover; analyzes data and business issues on a daily basis.

· Communicate and ensure operational standards for excellence in every aspect of the market while continually focusing on enhancing the guest experience.

· High level of planning and time management skills to drive results across the market in people, sales and profits. Dedicated to spending 90% of time in the field and 10% administrative.

· Lead a high-level of process and system rigor along with people management and training to the organization to ensure standardization and consistency within the business.

· Implement operating practices for new restaurant openings that allows for the seamless opening of multiple locations simultaneously; works collaboratively with opening team through process and execution.

· Ensure the continuous maintenance and performance of the restaurants’ physical production capacity; monitoring that all food and product preparation areas and Team Members maintain the highest standards of public health, sanitation, and safety. Maintains exceptional exterior and interior physical plant of all

restaurants.

ORGANIZATION RELATIONSHIPS

The Market Manager is responsible for direct leadership of the General Manager, skip-level leadership of the management team and interacts with restaurant and support center team members on a regular basis. This position

builds business relationships with other departments, including but not limited to Learning & Development, Talent, IT, Financial Planning and Analysis, Marketing, Payroll, Legal, Loss Prevention, Supply Chain, Real Estate and Facilities.

REQUIRED QUALIFICATIONS

Minimum Educational Level/Certifications

· Bachelor’s degree in business or related field, preferred

Minimum Work Experience, Qualifications, Knowledge, Skills, Abilities

· Outstanding oral and written communication skills.

· Must be proficient in MS Word, Excel, and Outlook

· Exceptional organization skills, and decision-making skills, especially under stressful, difficult situations

· Demonstrated ability to think strategically and successfully execute tactics

· Proven self-starter who sets aggressive plans and consistently meets the challenge

Travel Requirement

· Travel may be required +80%.

Work Experience and Qualification

· A minimum of 3+ years of progressively responsible operations leadership in a consumer-focused multi-state business preferably within the restaurant QSR or fast casual industry

Hot dog! The annual salary range for this role is $90,000. – $110,000.
